Juicy XXL beefburger with coleslaw and basil egg in homemade multigrain roll

Preparation time: approx. 90 minutes
Cooking time: approx. 30 minutes
 

Ingredients multigrain rolls

  • 500 g multigrain flour
  • 2 g salt
  • 20 g yeast, fresh, crumbled
  • 25 g sugar
  • 1 egg, beaten
  • 240 ml milk
  • 60 g butter, soft
  • Multigrain flour for dusting

Preparation multigrain rolls

Warm up the milk, add the butter and allow to melt. Place all the other ingredients in a bowl, stir well with the dough hook and then add the lukewarm milk and work into a dough. Knead for at least 5 minutes. Cover the bowl with a clean cloth and allow the dough to rise until it has doubled in size.
 
Knock the dough back, quarter, shape into balls, place on the baking sheet lined with baking parchment and press flat with the ball of the hand until a diameter of 12 cm has been reached.

Then make a grid pattern on the rolls with a sharp knife, dust with multigrain flour and again allow to double in size. In the meantime pre-heat the oven to 180°C. Bake the rolls in the hot oven for approx. 20 minutes. Allow to cool down on a rack.

Before serving, halve the rolls and toast until crispy on the grill or in the frying pan.

Ingredients beefburger

  • 800 g minced beef
  • 1 onion, peeled
  • A little oil
  • 6 tbsp mango chutney
  • Stir 2 tbsp mustard and 1 tsp paprika powder together
  • ¼ tsp sambal oelek
  • Salt, freshly ground pepper

Preparation beefburger

Chop onions and cook until soft in a little oil. Add the cooled onions to the beef, mix together with the other ingredients and season to taste with salt and freshly ground pepper.

Divide the mass into four and shape into burgers. Cook the burgers on the grill or fry in the frying pan with oil.
 

Ingredients Coleslaw

  • 300 g white cabbage, trimmed
  • 150 g carrots, peeled
  • Approx. 4 tbsp balsamic vinegar, white
  • 120 g mayonnaise
  • 400 ml orange juice
  • Salt, freshly ground pepper

Preparation Coleslaw

Reduce the orange juice in a suitable pan to approx.100 ml liquid (syrup) and allow to cool.

Grate white cabbage and carrots finely, mix with the other ingredients and season to taste with salt and freshly ground pepper.

Allow to draw for at least 1 hour.
 

Ingredients basil eggs

  • 4 eggs
  • 10 g basil leaves
  • 2 tbsp cream
  • Salt, freshly ground pepper

Preparation basil eggs

Place all the ingredients into a mixer beaker, mix and season to taste with salt and freshly ground pepper.

Warm up oil in a non-stick frying pan, 12 cm in diameter, and make four omelettes.
 

Further ingredients

  • 12 slices of bacon, fry without oil until crispy
  • 4 gherkins, cut into discs
  • 2 tomatoes, sliced
  • 8 lettuce leaves


Assemble the beefburgers with the various ingredients and keep together with a toothpick.


Tip

Replace multigrain flour with white flour. Make the coleslaw the previous day.
