Hake rolled in ham on courgette

Hotpan or Durotherm: For 4 persons

The fish is cooked in a double walled pan such as a Durotherm or the Hotpan by Kuhn Rikon and not only cooks at a low temperature like this but also in a very energy-saving way. If you do not possess a pan with an energy-saving function, you can let the fish cook until done on very low setting on the hob.


  • 600 g courgettes
  • 1 red onion
  • Salt
  • 2 sprigs of dill and flat-leaved parsley
  • 1 teaspoon of pickled green peppercorns
  • 600 g of skinned hake or zander fillets
  • 4 large slices of raw ham
  • 2 tablespoons of rapeseed oil
  • 50 g each of stoned green and violet olives
  • 50 ml white wine


Trim the courgettes and cut into cubes 1 cm in size without peeling. Peel the onions, quarter them and cut into fine strips. Place the courgette and onions into a bowl and add salt.

Chop the dill and parsley finely. Likewise chop the peppercorns finely.

If necessary, rinse the fish fillets briefly under cold water and pat dry well. Divide the fish fillets into 4 equally large portions. Distribute the herbs and green peppercorns over them.

Wrap each portion of fish in a slice of raw ham and, if necessary, tie with kitchen string.

Heat a pan (see introductory text) with the oil. Lightly cook the courgettes with the lid on for two minutes. Add the olives and white wine, bring to the boil and then lay the fish onto the vegetables. Cook with the lid on for 1 minute and allow to boil vigorously, then place the pan on a trivet or, if a Hotpan is being used, into the heat-retaining holder. If using an ordinary pan, put the temperature on the lowest setting. Allow the fish to continue cooking for a further 15 minutes. In so doing, refrain from opening the pan at all so that the heat remains in the pan.

Arrange the fish together with the vegetables on pre-warmed plates and serve immediately.


Rice or couscous goes with this.

For the small household

2 persons: halve the ingredients, but use 50 ml of white wine and adjust the size of the pan.
1 person: quarter the ingredients, but use 25 ml of white wine and adjust the size of the pan.
