Delicious Aubergine Sandwiches

Swiss Multiply: For 6 persons


  • 2 aubergines
  • 2 tomatoes
  • 1 mozzarella
  • 2 stems of mint
  • 2 garlic cloves
  • 1 bunch basil
  • 10 g pine nuts
  • 35 g parmesan
  • 30 ml olive oil
  • 1 tsp lemon juice
  • Some oil for frying


Strip garlic, wash basil, dry, and remove the stems. Purée finely together with the pine nuts, parmesan and lemon juice. Stir in the olive oil and allow to draw for approx. 1 hour. Wash the aubergines, dry and cut into slices lengthwise. Fry the aubergine slices in batches in a frying pan in some oil for approx. 6 minutes until lightly browned. Season to taste with salt and pepper and allow to cool on kitchen towel.

Wash the tomatoes, dry them, and then slice finely. Likewise, cut the mozzarella into slices. Spread the slices of aubergine with the pesto and place a slice of tomato and mozzarella on each. Then fold over and secure each one with a wooden skewer. Heat up a little oil in a frying pan and place the sandwiches in it once more. Fry on medium heat for approx. 3 minutes until the mozzarella has melted. In the meantime, wash the mint, dry it and chop coarsely. Remove the aubergines from the pan and place on kitchen towel. Sprinkle with mint before serving.
