Grape and Mascarpone Risotto

Durotherm/Hotpan: For 4 persons


  • 10 g butter
  • 1/2 shallot, finely chopped
  • 240 g risotto rice
  • 6 dl vegetable broth
  • 1 clove
  • 2 tablespoons full cream
  • 60 g Mascarpone
  • 20 g Parmesan, grated
  • 120 g grapes, black, halved and pips removed
  • White wine
  • Salt, pepper from the mill


Heat the butter in the Durotherm/Hotpan, lightly braise the shallot, add the rice and braise until transparent.

Add the broth and the clove and simmer on a gentle heat for 1 minute. Cook gently for 20 minutes covered in the insulating bowl.

Whisk the cream until fluffy. Add the Mascarpone, Parmesan, cream and grapes before serving. Season with wine, salt and pepper.


Excellent with game, you can replace the black grapes with white grapes.
