Make a mix from the hay, wild herbs and flowers. Heat the Hotpan without fat. Brown the roast beef on all sides at a moderate heat. Season with salt and pepper.
Wrap the meat in the hay. Place in the Hotpan and heat. Cover and cook gently for 50 minutes in the insulating bowl.
Serve the roast beef with the hay in the Hotpan, and carve at the table.
Serve the roast beef with roasted potatoes.
